Stuart Gillies Stuart Gillies

On 15th May 2003, Gordon Ramsay and Stuart Gillies unveiled the exciting and vibrantBoxwood Café. Stuart's passion and contagious drive was captured by Gordon who immediately offered Stuart the reins to this innovative restaurant concept.

Prior to this, working as Head Chef alongside the acclaimed Angela Hartnett, Stuart transcended old classic French dishes into modern Italian at The Connaught. His influences at this time also reflected a year spent in Rome at the Lord Byron Hotel and 3 years in Stockholm, Sweden.

The fresh approach to Boxwood Café was developed by Stuart through working at Daniel's in New York under the direction of the legendary Daniel Boulud. In just a year after opening, Daniel's was rated "one of the ten best restaurants in the world" by the International Herald Tribune in New York. Stuart also worked at Le Caprice in London where he honed his skills before opening Boxwood Café.Stuart's inspiration has always remained the seasonal ingredients drawn from the best purveyors.

Both Stuart and Boxwood Café have featured in numerous television series including GMTV and Masterchef Goes Large. Stuart is also now a regular guest on BBC1’s Saturday Kitchen and most recently Stuart was chosen to compete in the second series of the hit show Great British Menu which aired this Spring.

Stuart’s recipes have appeared widely in magazines and newspapers, and he demonstrates regularly on food shows in the UK and abroad including Taste of London in Regent’s Park, The Restaurant Show and The Daily Telegraph House & Garden Fair at London’s Olympia. He lives in west London with his wife and three young sons.
