maze and maze Grill open in Melbourne

Gordon Ramsay’s first Australian restaurants, maze and maze Grill, opened on 29th March 2010 in the heart of Australia’s food capital, Melbourne.

Both restaurants are located at Crown Metropol, the third and newest hotel within the Crown entertainment complex and are modelled on their highly successful British namesakes, with menus specifically developed to highlight the freshest and finest seasonal ingredients available throughout Australia.

Gordon has appointed one of his most trusted and talented chefs, Josh Emett, as Chef de Cuisine of both restaurants. Josh is also responsible for Crown Metropol’s in-room dining as well as the hotel’s spa cuisine.

maze offers a sophisticated yet relaxed dining ambience created by a mix of warm tones, natural materials and finishes. Flooded with natural light during the day and filled with soft candlelight at night, maze offers the ideal combination of a stylish and inviting dining room, accomplished food and perceptive service. It is a perfect destination for lunch or dinner, from one-course and a glass of wine to an eight-course sommelier’s experience. maze breaks the formal traditions of French cuisine adopting Asian influences in tasting-sized dishes.

Taking inspiration from the informal style of New York’s grill restaurants, maze Grill offers a wide range of different breeds and cuts of beef cooked over coal, as well as starters, salads and plates to share. The open kitchen creates a buzz of activity to complement the menu, with sizzling meat and fish hot off the char-grill presented to diners on handmade Australian wooden boards.

maze and maze Grill also feature a bar that reflects the relaxed sophistication of the two dining rooms and offers guests a drinks and food menu to meet the most discerning needs.
