Shinya Maeda - Chef de Cuisine at Cerise by Gordon Ramsay
A native of Japan, Chef de Cuisine Shinya Maeda has been responsible for overseeing the day-to-day running of ‘Gordon Ramsay at Conrad Tokyo’ and ‘Cerise by Gordon Ramsay’ since being handpicked by Ramsay in early 2008 to take the helm of his first restaurants in Asia.
Maeda brings with him extensive international experience working at the likes of ‘The Canteen’ and ‘Soho House’ in London.
A move to the United States brought invaluable experience in the kitchens of New York’s famed ‘Aquavit’, a contemporary favorite of many celebrities. Returning to England in 2004, Maeda served as Sous Chef at The Lanesborough’s highly acclaimed ‘The Conservatory’ before joining Gordon Ramsay Holdings in 2006, working alongside the man himself at ‘The Savoy Grill,’ ‘Petrus,’ and the legendary ‘The Restaurant Gordon Ramsay’. Although relatively young for his current position, Maeda very quickly worked his way up the ranks distinguishing himself with his wealth of inspiration and international experience until being handpicked to be his right-hand man in Japan.
Ramsay’s confidence in Maeda’s culinary skills was soon proved correct: in the same year of being assigned to his current role of Chef de Cuisine of ‘Gordon Ramsay at Conrad Tokyo,’ the restaurant received critical acclaim with the award of one star by the Michelin Guide Tokyo, an honour Maeda has maintained for four consecutive years.
