Four or Six Courses

Swede and truffle honey velouté, braised rabbit, cep brioche and cep butter

Tartare of mackerel and crab with avocado, pickled cucumber and marinated daikon

and/or

Pressed foie gras, ham hock and pork cheek with saturated quince, pickled onions, parsley mustard

Pan-fried daurade royale, confit baby fennel, brown shrimp and lobster risotto

or

Scottish partridge, date purée, Brussels sprout leaves, Madeira and bay leaf sauce
