Mark Askew
Yorkshire born Mark Askew started what was to be a successful career in the North of England, where his early years in the industry provided him with a variety of valuable experiences.
His move to London in 1989 brought his first encounter with Gordon Ramsay where he took upon the role as a Commis Chef at the Savoy Grill, under the direction of Anton Edelmann. His vigorous practice in the catering industry then influenced him to extend his capabilities by working in other established London restaurants with some of the most influential chefs. During this time Mark worked alongside Pier Koffman of Tante Claire, Michael Bourdin at The Connaught and Nico Ledenis at Nico’s.
In the year of 1992, Mark once again worked with Gordon in the kitchen at Aubergine, whilst graduating from his role as Chef de Partie and acquiring the title of Sous Chef. To further his skills, Mark made the decision to move to France to appreciate their remarkable cuisine and adaption of fine dining, following some sensible advice by Gordon. Mark spent two years working at Maison de Bricourt and at the remote Michel Bras.
Progressively becoming a more coveted chef, Mark returned to the UK and back to Aubergine as Head Chef. With his consistent superior work ethic, he soon took his fine skills to work alongside Gordon at Restaurant Gordon Ramsay on Royal Hospital Road, which opened in 1998. The recognition of their hard work and determination was rewarded within four years of the restaurant being in service, with the honour of receiving its 3rd Michelin Star in the ‘Michelin Road Guide: Great Britain & Ireland, 2001’.
Mark’s exclusive and innovative approach to fine dining has created a signature experience with captivating menu selections. His greatly desired performance has also been tailored and enhanced within the new Pétrus, adding his personal elegance and supreme attention to detail to this highly anticipated contemporary restaurant.
Mark has overseen Gordon’s restaurants as Executive Head Chef of Gordon Ramsay Holdings since 2001. His talent, passion and considerable involvement with Restaurant Gordon Ramsay has seen it featured consistently among ‘Restaurant’ magazine’s annual S.Pellegrino World’s 50 Best Restaurants, ever since the list began in 2002.
