Cookery courses
Created by stellar chef Gordon Ramsay and Resident head chef, the program is a journey into the true essence of Tuscan cuisine, highlighting the finest dishes and freshest ingredients from the region.
Guests are taught how to recreate Tuscan dishes featured at Castel Monastero in their own home. The programs offered are short classes (2 hours) and masterclasses (3 hours) followed by lunch or dinner.
The masterclasses will allow you recreate a complete rustic Tuscan lunch or an exclusive fine dinner for your guests at home.
Tuscany is the quintessential region for cuisine. No other region has such a vast range of vegetables, meats, cheeses, fish and seafood. The Tuscan retreat cookery program teaches traditional Tuscan dishes and the fine dining dishes of our exclusive Contrada Restaurant by Gordon Ramsay.
Beginning in the late morning or afternoon in our kitchen, the Executive Chef and a member of the brigade will brief you on the signature dishes that you will learn to create, explaining the ingredients and preparation methods that are fundamental to the dishes. You will be part of a small group (maximum 6 persons) who will receive one to one guidance and tuition.
The masterclass offers guest the unique opportunity to learn how to create a complete menu for either a rustic Tuscan lunch or fine dinner. The rustic Tuscan menu covers traditions such as ribollita soup, Panzanella, Pappa al Pomodoro, Cacciucco di Ceci, various crostinis, pasta Pici Senesi and much more.
The fine dining masterclass teaches a full four course dinner with such signature dishes as Tuna fish tartare, Rabbit Confit, Gnocchi of Baccala, Sour green apple and horseradish Risotto, Spaghetti with cherry tomato, clam and lobster, chianina beef tenderloin, pan fried monkfish with saffron and Asparagus and much more.
The patisserie course will allow guests to learn superb dessert recipes featured in our fine dining menu directly in our Patisserie kitchen.
Together with the resident chef and our patisserie chef Caterina D’ Andrea you will learn make Tiramisu tris a unique recipe featuring classic, Amaretto and Amarello flavours, white and dark chocolate Ganache, Semifreddo with licorice, Torta di Riso, Torta della Nonna and of course gelato making.
After the demonstration and cooking, guests will move through to the restaurant for lunch or dinner. Our chefs will recreate the dishes for you to enjoy together with wines selected by our sommelier that complement the menu and will explain the reasons for the selection.
Dessert and coffee will follow and each guest is presented with the recipe cards of the dishes created to take home as a memento and of course for reference in recreating the dishes at home.

Reservations
All guests receive a portfolio of recipes, Cookery apron, the lunch or dinner served with specially selected Tuscan wines to accompany each dish.
