Cooking instructions

  1. Preheat the oven to 400˚F (204˚C). Line a baking sheet with parchment paper.
  2. Whisk together flour, baking soda, baking powder and salt in a large bowl.
  3. Using a box grater, grate the frozen butter into the large bowl and toss to combine evenly, coating all the butter pieces in flour.
  4. Fold in the sausage, cheese and chives. Add the buttermilk and stir to combine into a moist dough. Use your hands to knead the dough together and turn it out onto a lightly floured work surface. Using a rolling pin, roll the dough into a roughly 4x8-inch rectangle and then fold in half, leaving a roughly 4x4-inch square. Repeat this process 3 more times to develop flaky layers. Roll the dough into a 9x9-inch square and use a knife to cut into 16 squares. Transfer the squares to the prepared baking sheet and brush the tops with cream. Bake for 10-15 minutes, until the tops are golden brown.
  5. Remove from the oven and let cool for 5-10 minutes before drizzling generously with hot honey and serving.

Tip: Make a batch and freeze on a baking sheet after cutting into squares. Simply defrost in the refrigerator overnight to bake off in the morning for hot, fresh biscuits on demand with no effort.
